Waiting 30 years to draw its first bottles from the barrel was particularly hard, so magnificent was it already in its youth.
Tasting this great calvados is a sensation hard to put into words, a moment out of time.
Words can capture some of its aromas, such as the intense oak or its extreme refinement, but they are not enough to pierce the mystery of its astonishing complexity.
Its naturally reduced strength comes from years of ageing draped in the nobility of our historic cellars.
Incredible to imagine such gentleness at 52%, and yet…!
1994 harvest:
Another slightly hot year, but far wetter at the end of summer, for a rich and powerful cider proving the immense qualities of our apple varieties on those rare veins of limestone cutting through the clay of our terroir.
Fermentation through the year 1995 was punctuated by heatwaves, opening the way to an unusually gentle distillation, for a very great vintage with strong potential for extended ageing.
